Black Rice and its nutritional value
Once reserved for the emperors of ancient China, Black Rice is often called “forbidden rice” and it also treasured for its nutritional qualities and delicious sweet nutty taste, soft texture and brilliant deep purple color. It is extremely high in antioxidants called anthocyanins, also high in vitamins and minerals such as iron, potassium and magnesium, and rich in Amino Acids. According to Chinese herbal medicine, It is considered to be a blood tonifier.
A new study by the Department of Food Science at Louisiana State University Agricultural Center shows that a spoonful of black rice bran or 10 spoonfuls of cooked black rice contains the same amount of antioxidants as a spoonful of fresh blueberries, but with less sugar and more fibre and vitamin E antioxidants.
Black rice is whole grain rice. It is high in fibre and nutrition, with a sweet nutty flavor. Black rice can be cooked using the same methods as for whole-grain brown rice alone or with other rice for simple yet delicious side dishes, risottos, salads and desserts. When cooked, it turns brilliant dark purple colour.
Add 1 cup rice and 2-1/4 cups water to pot. Bring to a boil. Cover, turn heat to low, and simmer for 30-40 minutes. If using Rice Cooker, soaking at least 2 hours will help to bring the cooking time down.
