Spirulina is an ancient plant traditionally used as a nutritive food. It is a blue-green micro-algae that grows in a long, spiral filament and thrives in very hot and alkaline environments. The blue-green colour of the plant is a combination of green chlorophyll and blue phycocyanin pigments. Interestingly, the cell walls of Spirulina are made up of soft mucopolysaccharides rather than cellulose, making it easier for humans to digest. It is a natural source of protein as well as other beneficial nutrients.
